I for one actually really like the inclusion of non-porn content. Like, just because it's a porn game doesn't mean all it's decisions and story sections need to be about reaching the next sex scene, you can have stuff to enrich the world itself in between and Dog Days does give an insight to a character or help with context depending on who you bring. It may just be my weird brand of asexuality speaking here, but I do like giving a damn about the games world and non-sex content is a way to do that.
Kinda why I like Valencia's and Serena's content so much. While it does unlock sex scenes and content, the stuff in between is great and stands on its own. Also I'm a sucker for romance. Two reasons I like it.

Considering that the last public patch added Sandre and Caera (both demon ladies with horsecocks) and the next to last backer patch added Vacia (succucow with a horsecock) you might be onto something here... and the last backer patch added a new Kasyrra scene. Oh, and for horsecock attached to males the latter two updates added one new character and one new Brint scene too.
Funny enough, I went looking at She-Hulk as an example and actually they went with making her look more like a behemoth like the Hulk for 2018 Avengers.
And I was kinda hoping that the gender swap would be more like, appearance focused instead of also messing with his personality that much? Like sure, new stuff's suddenly a turn on but what's the point if she's not gonna tuck Cait under her arm and use her throughout the night if you're sleeping alone at the Frost March? Wsan has already made it clear that there are Reasons the armor does what it does which we'll learn about during the KM plot.
Companion submissions have been closed for over a year so once Viv's companion content gets implemented that's it.
Brienne will happily try to break your bed (and pelvis) every night so I think you're more whining about Brienne not looking exactly like you wanted her to than about what she does or doesn't do. At this point I refer you back to the point I already made about minotaur sexual dimorphism.
i will say... i feel like "sexual dimorphism" is kind of a cop-out. like, how people complain when, in fiction, men look like cool monsters and the women of the same species are always somehow human big titty girls. i feel the complaint is valid, so let's just be honest about the reason - that's not what the author had in mind for brienne.
i think the most productive thing for watchering here to do is to ask in "what content would you like to see" for a minotaur lady that meets his needs.

The silver lining atleast is that while we don't get dommy Brienne, she does give us access to Domme Rina! I'd totally love to have dommy Brienne as well but Rina's scenes so far are <3 but just lacking repeatable ones.

And as plasmi said, the whole personality change is there because Wsan wanted it like that and because of Meta aspects. He did not want to force the players to restart the game to get Brienne (If I remember right) so he just wrote in-game transformation for him. The reason for personality change is everyone's guess.
Personally, I wish Brint was more like Brienne, not other way around. A subby, monogamous buff dude is a sweet concept but I understand most people are not into it.

Just gonna fully retype the minotaur sexual dimorphism essay, for anyone who hasn't read it:
Brint's kind of minotaur, Southern/KM, has the men being full cow and the women being human with cow features. Kavi's kind of minotaur, Northern, has the women being full cow and the men being small and cute human boys with cow features. Even their cultures are mirrored, in that Northern women are the ones who fight and hunt, while their boytoy harems take care of the houses. This is explained by the two original genders of minotaur gaining vastly different sexual preferences in the Olden Days once they started mingling with humans, then eventually splitting off from each other and becoming two separate peoples (reinforced by alchemy and this kind of selective breeding). The minotaurs are the only race so far that has this kind of dimorphism, as well. Everyone else just has basic height/muscularity/curvy differences.
The minotaur dimorphism is much more fleshed out here than in most other media with cow people.
If/when Kavi gets sexual content, she would definitely fit into their need to be dommed by a massive furry cow lady. She's even the same height as Brienne, but she's broader-bodied and her muscles are hidden under a layer of fur and squishiness.

Putting aside the above explanation about why minotaurs in this setting have such sexual dimorphism written-in quite well, I'm guessing they felt Brienne as a musclular dom would overlap/clash with Dom Arona. That, and the writer wanted to write Brienne as a different character rather than just Brint-as-a-lady.

and triggered the druid talk, went to leave the palace and trigger the banshee quest, went to check out the banshee stuff and triggered Elyon.

stuff and khor'minos. Wasn't trying to avoid the palace, but honestly, I just didn't have much of a reason to go there for a while. Lots of content in the game to keep me busy floofs
