Well written and fulfills the desires of a very devoted niche of subs. If you're not in that niche, she's not for you, which is fine and also why she's so easy to remove from the game.
As you note, she's well-written and it's obvious there's a Story that we haven't gotten yet but one day might. Some people (read: me) find that interesting. xD
And then on top of that she appeals to people who like that sort of domme content and hits different notes than the other characters who play to the same fetish. She's a much more loving and gentle domme than Lyla or Arona (though the latter does good aftercare) and gives the Champ more agency, especially compared to Domrona. She also has the maid scene, for people into that.
Savin's mentioned that 'defending your lands' is something that's planned so while we don't know exactly how that will be implemented it sounds like we'll be getting some form of this in the future.
Idk, finding content with that soft dom aesthetic that fits my tastes as perfectly as she does has been pretty hard. Like, Evelyn being my literal first encounter after the tutorial was a fantastic first impression and I almost exhausted all of her content before even leaving town.
There's a lot of sub content that gets sooo cloose to what I'm interested in but she hit it exactly.
There’s a surprising lack of “goth” bait characters & I find that disturbing. The closest we have are Daliza, Evelyn, Kasyrra, & Lady Evergreen* but they all come up short. Leold fits to a T but he doesn’t even have bad end sex & Nareva as of now is a one-off unfuckable character too.

Lyla is a lot more heavy handed in her approach to domming. Evelyn is almost motherly.

I love Evelyn's domming style and she gets bonus points for being sweet on Ryn!
She's available in the tavern so you don't really need to go out an find her like a lot of other sexable npcs. Also appeals to a niche like a lot of other people mentioned, and it just so happens that a ton of people like soft dommes.
I would like to see roleplay scenes for Kasyrra where she poses as one of our Companions, the way Ceraph could for Urta, Marble, and Dominica in CoC. So, Kasyrra as Cait, Brint/Brienne, Etheryn, Arona, etc.

Kasyrra doing mean impressions of your companions would be fun though (with all the usual disclaimers about how someone would have to write it and I am not volunteering to write it). She spends all her spare time watching us from her palace in the Ways Between, I'm sure she has plenty of material.

There's not anything unique about kitsune appearances compared to any other race, other than having multiple tails and reverting from their human forms (which would both easily be covered by any demon's shapeshifting). She wouldn't be able to sneak into the treehouse by pretending to be one, but she could absolutely fool anybody who isn't sensitive to their soul-shenanigans.
If she can grow an extra pair of limbs to be Tauryrra, I'm pretty sure that multiple tails aren't going to be a problem for her. It's not as though she'd need to copy everything about a floof in any case, just the surface appearance.
