There's faux cow that's planned but it's pretty much in the faaaaar backburner for now.

While I play a herm nowadays, with both CoC and TiTs I always made a dude my first playthough, once I get a good enough handle on the game and all its events then I shift to herms.
As for your second point, I wouldn't be surprised if we could buy a planet off of some natives kinda like how Manhatten was bought for about $900~ in beads.
I play Male/Female in a rough 50/50 ratio. No herms though... Just not my thing.

The option to participate in the races as a jockey. Jerryn's scenes were very cool but aside from the rescue and a walk around the town you weren't really used.

Seriously, though, it's been said again and again that more of the writers for TiTS are gynephilic, as in they're attracted to feminine things. Now, if you're a writer chances are you're going to write things you want to, so those writers are going to make feminine-centric content. This is why there's more feminine characters.
Now, if you want someone to write something they wouldn't normally write, you could always try to commission them for it. So, if you want more cuntboys and guy herms, put your money where your mouth is and stop whining. OR, imagine this, quit insulting everyone's writing and characters so they don't make their shit inaccessible to male PCs out of spite.

And I thought that this game was supposed to be... Inclusive for your characters? I can at least accept the fact that there will likely always be more feminine characters than anything else, but I can't stand it when people lock content to a specific type of character build, like feminine characters only (or god forbid take it up a notch and require no flat chest and no dicks).

It's made me stop skipping through things and actually READ what it has to say. It has the best quality control in terms of the writing, I've never read something (outside of silly mode of course) that sounds like something a horny teen wrote on the spot.
But, just because content is well written, that doesn't mean it's immune to criticism and is perfect. Now, when I list these characters, I am NOT insulting the writers, keep that in mind.
Gender locking characters is, quite frankly, the biggest bullshit ever. In a game where everyone is bi (or pan, since there are more than 2 sexes), even characters that prefer, say, guys over girls will still at least let your fem PC blow them or get assfucked. Then, one day, along come the picky NPC's.
Lieve is a lesbian only. You can talk to her about MOST things, but any sex scene involving her alone is blocked. Okay, that's just one character. So what if her content is very well written, just one character you can't sex.
Next up, we have Riya. Aside from her "charming" personality toward non-humans (aka most PC's), those that can get past that are blocked from having sex with her. She also becomes more restrictive, only accepting feminine non-taurs who have a vagina and NO dick, meaning that even herms (everybody's favorite thing) can't have sex with her. Sounds rather picky, doesn't it? Especially considering she's a dickgirl herself...
Next we have Busky, a character who is only into masculine males. Of course, if you're a cuntboy or maleherm, you can still sex him, but nobody cares about them, apparently, making this character locked out for the majority of players.
Then there's Edan. We finally get a male Leithan that's fuckable, and... He only likes females who have a vagina. To top it off, he's one of the few male doms. Sure, you can have drunken sex with him, but after going through the locked content and comparing them, it's just not as detailed, sadly.
Ciaran is at least not so bad. Sure, he prefers females, but he'll take a trap, even though they're still locked out of some content. And apparently, they're gonna get a drunken sex expansion for normal males, so there's that.
Also, Ramis only likes men and won't fuck females, herms, or dickgirls. Then again, her content is short anyways, and heavy on the SPH if you're a trap, so whatever.
Then there's ridiculous things, like the manor gangbang only allowing people with a pussy to participate in it. You have a mouth, an ass, hands, and a body in general, shouldn't that be enough? And although you still CAN do it if you're a cuntboy or maleherm, the writing doesn't take that into consideration and still calls you a girl, so it's probably a glitch that'll be fixed up anyways. You still can't become a male stripper at Beth's unless you're a trap or maleherm/cuntboy, again the maleherm/cuntboy things probably being a glitch because who gives a shit.
Now, those characters aside, if someone tried to make characters locked out of spite, that shit wouldn't fly and they'd be rejected, no matter how good their writing is. Firstly, I find it highly ironic that in that whole wall of text argument, Nessa was never mentioned, who is probably one of the most restrictive, if not THE most restrictive characters to actually be able to fuck in the game. 
Now onto a few things that are pretty vast misconceptions, character/scene rants aside...
I'm very sure @HugsAlright LITERALLY just answered this question. If we had more competent writers to write said gay content and preferred it, then ok. But since not, you're gonna get a higher volume of content catered to those who moreso like feminine stuff. That's the way the cookie crumbles unfortunately... I mean, there IS the option of writing said content yourself as well. Literally nobody's stopping you from writing all the gay stuff you want! That's one great thing about TiTS is that a good maybe 90% of the content implemented in the game is 3rd party user submitted content. That's what got me willing to give it a shot myself, and I never wrote a thing before doing this!
These two kind of go together. Not everyone in TiTS is bi/pansexual, my dude. IMO, it's perfectly healthy for at least some NPCs to have specific preferences. It makes some characters unique, especially if you're running through the game with a different set of genitals. If literally every NPC in the game fucked anybody with a dick/pussy or both with no problem then TiTS would be boring for the very reason that you say here; everything would be standardized and identical. Characters would have a lot less depth to them and wouldn't be very different from one another. As Hugs was pointing out the last post, you can just run through the game on a different Steele if you want a different experience with an exclusive scene for a character. A VAST number of existing NPCs are very inclusive already, so I have no clue why you feel that it isn't...

If an idea you pitch so happens to catch another writer's attention and they want to do it, then great, you lucked out! That RARELY happens though. Going back to the first point, the unfortunate truth is: since pretty much everyone but Fen/Savin are volunteer writers, they're going write whatever the flip they want to, or whatever someone is willing to pay them shekkels for. Ideas and suggestions are nice and all, but coming in and whining about your androphilic wants for the game directly to the writer core as a whole in this manner comes off as extremely rude, ungrateful, and makes you sound self-entitled. Not saying that to be mean or make a personal attack, but this is just how I see it from a writer's standpoint.
