Is there any major reason why there aren't any bee or slime TF's available in-game yet? Both races exist and you directly interact with them... Furthermore, why isn't there an ovipositor option anywhere?

Hornet TFs are coming but haven't gotten implemented yet, slime TFing isn't available for the same reason that taur/naga bodies are not (someone could write a non-amorphous goo race but there are no specific plans for one) and ovipositors would require special coding that the devs do not want to have to deal with so that's never happening.

A hornet tf is coming soon(tm), slimes aren't bipedal so until we get a slime species that is confined to a humanoid form there won't be a tf for them and even after that it's a big question mark. Ovi's will not be available to the player because nobody ever accounts for them and it would be a waste of time and resources. Beefolk will come with a human wang.
