When New Updates Come Around

I have a question for when a new build becomes available. Is my old game screwed? Or is there some obvious way for me to transfer my saves that I'm not seeing

Your save will remain ready to use like always as long as you don't try to use a very old save in a recent build, or vice versa.

Or you don't delete your cookies. I lost a character due to that. If you need to make sure to save to a file first

As mentioned, your saves are fine. If you're on the download version, the saves are stored in your User folder so they won't be affected by changing the version should you delete the old files.
