I know that for writing I should start working on single encounters and sex scenes, but once that is done, is there anything I should keep stewing in my head? Are software devs even needed?

If you want to be a coder, you'll need to talk to @Upcast Drake, who can get you set up. Runing's link above is a great help for getting started writing. I also highly recommend this formatting doc. While it's written for TiTS, it works rather well for CoC2 as well.
