You'll be totally locked out of the Kas romance I believe and there will be overt and irreversible changes to your character at least for the kitsune as I don't think you can td your way back. The same might be for valkyrie but I'm not sure to what extent.

you break up with kas if on romance route, locking her to hostile, which also removes her cute grandma scenes with freja (aileh's daughter)

benefits include special racial powers, an otherwise impossible tf and special interactions

Soulbinding imo isn't worth it, doesn't really change much of anything except losing Kas as a lover. I have two playthroughs though for Kitsune and Valkyrie (so I can try out the content exclusively done for bound champs) and I personally prefer Valkyrie for Lumia and Annika. Though I do really like the scenes for Kitsune champ with certain characters.
My main playthroughs are Kas romancers and remain a bimbo elf.

I'm want to know what will be the consequences of doing that, and which character you recommend I soulbind with
Playing as a kitsune is actually pretty fun if you play as dick champ, have Kiyoko and bone everyone since there are many dialogue and scene alterations. And there is certain prestige built around it.

Valk ain't worth it in my opinion. Not much acknowledgment, you are no different then any other Valkyrie. I wish we gained a title like "holy mother" or something. Or ability to play as angel boys.

Still, if you are not into Kas that much, like me, and if you are into their aesthetic, then go for them.

It seems like she only turns hostile if I tell her I'm soulbound, or does she eventually found out even if I don't tell her? And if I remove the "Soulbound" perk using save editing, will I keep the benefits of being soulbound or not?

Like others said, Soulbind if you like the aesthetic and okay with losing Kas as an option - You can still enjoy's Kas's romance content to a certain point - but eventually she will find you out and be devastated and reject you harshly. You also get some variation in interactions. The Soulbind's are good for head canon content for your version of the Champ, least for me. In terms of when, you can either tell her your soulbound and end it abruptly - or she'll apparently find out at the end of Act II from what Savin has hinted and you'll get locked on hostile.

Honestly I wish soulbinds provided a little more, like a unique armor set for each - considering you lose out entirely on Kas (maybe Kas can gift you a unique weapon or something - not as strong as the set but balance out the power creep but still let the sets make up for losing Kas).

I'm the kind of man who always plays human male in games, so TFs in general don't interest me. Paired to that I also don't love the idea of pledging your soul to gods, your sword sure, paladins are cool as fuck, but your immortal soul? Nah.
When I initially heard about Lumia soulbind I was interested, minimal physical changes, so I could still be human, and the way she's the "main" goddess makes easier to roleplay giving her your soul, if in universe you don't know about the big truth tm that is. It's like in real world if you could give your soul to Jesus, I mean, that's where souls are already supposed to go, right? So it's just a preemptive payment. Also I quite like preg, so being the fertility goddess sanctioned divine champion stud would be pretty cool to be honest.
But alas, Lumias sworn are Valkyries, they're all really beautiful ladies, but despite liking them very much, I'm not keen on becoming one. So that one is also not an option. In the end, that's a moot loss, as I greatly enjoy the content for every Valkyrie, and Lumias, so that makes up for me by a longshot.
TLDR: no interest in soulbinding for me. If I ever were to do one, would be the nonexistent Lumian Stud champion one.

In my understandment that does not exist, friend. At least in Italian and Portuguese, stud has a male gender. As I would wager also in every other Latin languages.
But sure, I can imagine how a reasonable person who thinks primarily in English could develop a perspective similar to yours.
In the end, your conclusion is correct, it is indeed my preference for not being a woman that drives me away from the content.
