Is there any way to remove a camping site you placed down?

If you're paying attention, you'd see that in certain areas the camp sites actually degrade. There's no way to manually take them down.

Im guessing the foothills are not one of those areas?

Why would you WANT to remove campsites? Seriously. Early in the game, they cost a shitload of money. Usually, the problem is finding places where they don't disappear.

You can still interact with it as shown, and I haven't heard of camps interfering with the plot. Maybe if you gave more info.

True, I misspoke. Early in the game, it's a significant amount of money, and all throughout the game the drawback is that you can't stack them in slots in your inventory. They're also sold by a limited number of vendors, so you often have to spend a lot of time travelling back and forth between adventuring and vendors that sell them. In other words, they're difficult to carry and keep.

I don't recall an in-game reason justifying this but... a normal adventurer would only need ONE camping kit with them and once their ready to move on they would just do what a normal person does and... oh I don't know, call me crazy but... break it down and take it with them for the next time they need to sleep in the wild? I know, its insane to contemplate. :/

This is more or less meant to make you go back to town around level 1-2 so you can see new NPCs showing up like Ev and River. After that the money becomes trivial and also you have access to Ways Between.
