I want to know if there's a way to get sheep legs with 4+ legs. I know New Ewe is hard-coded to reduce leg count to 2 (which is lame imo, more taurs pls), but is there a way to get sheep legs and then increase your leg count without affecting the leg flags? Most places I've looked have a hard requirement to have X leg type before they'll increase leg count (i.e. Leitha Charm).

I thought it would be possible, but it seems the wiki is misleading and forgot to mention if you have more than 2 legs, they're automatically reduced to 2.

Not without Save-Editing, I don't think. Make sure to remember to change your Genital Spot, too.

Fortunately, the game will recognize you as a Sheep-Taur.

The conditions are weird. It almost looks like it's supposed to be possible to be a Sheep-Taur, but the leg reduction always kicks in first.

"\n\nIt’s not long after taking the pill that you suddenly crash to the floor, legs turned to jelly. You spend the next few minutes in near agony as your lower body completely reassembles itself until you’ve lost your tauric configuration and are left with a single pair of [pc.legs]."
vs
"\n\nYour [pc.legs] suddenly start shaking and quickly give out under you, leaving you sprawled out along the ground. Looking back, you realize that your legs and feet are reshaping themselves. It takes a while, but as you watch, <b>they transform into hooved, sheeplike legs.</b>"

I don't know if the conditions got copy-pasted or what. Might be worth a bug report.
(LegCount > 2 always returns True if the pc is a Taur.)

...you’ve lost your tauric configuration and are left with a single pair of numerous legs.
Got this in my testing, thought it was funny.
