It's hard sticking with Cait.

The game makes it obvious that Cait has a huge crush on your character. The game even places you in tender moments with her even if you pursue a platonic route with her. For example after the Midwinter Festivus Ball you wake up in bed with her after the party. She also gets protective and adorably jealous of the Kitsune shrine maidens who flirt with you!

But, it's so hard sticking with her because the game throws so many woman your way with their own arcs that are way more complex in their own right! Often times you can start a family with them unlike Cait. It's so hard having her as my "main" when the competition takes my attention away so much I often forget about her attraction as well!

It's just a matter of taste, really. I like Cait a lot, and she has enough good gear sets that she can fit in pretty much any team you want (she's actually a monster tank with level 9 Holy Vestments), and really, a lot of characters tend to lean the same way as that. Cait's ambitions are a bit simple on the surface, but I'm sure we'll get more for her (and most other companions) as the game gets closer to the final act. She is essentially the secondary protagonist, after all, in a lot of ways. I think only Etheryn matches how much main plot relevance Cait gets.

I personally like Kiyoko most in terms of story/relationship with the Champion, but given how the game outright allows (and in some ways encourages) polygamy, there's nothing wrong with keeping Cait along for the ride whilst pursuing all those more complex characters. It's less competition, more a buffet. Just... come back to her when you're hungry for her, so to speak.

Your walls
This game really isn't designed with monogamous relationships (for the Champion) in mind.

Plus like, Cait fucks regardless of whether you decide to. So you're fighting a losing battle on two fronts here.
