Is there a way to stop Sophora from attacking.

When I first defeated Her the options were too fague and clicked on Mystery which seems the option to not delete Her from the game and now I regret that, Her encounter rate is just too fucking high.

Like every other encounter is Her, It's soo annoying.

How all I get is when I defeat Her is to walk away or fuck Her.

I vaguely remember that you had to lose to her at least once for the option to unlock.

If that's not the case, then surely Theron or Waffles will know. (Update her wiki entry pls)

if memory serves, if you didn't disable her on your first victory, you actually have to lose to her. after that the stalking factor ramps up and you get the option again
