Want to see the new scene but despite wandering through areas it is meant to happen in haven't seen her, just how rare did they make her showing up now?

Her new scene is tagged as a combat encounter, so pick a spot in the Old Forest, Harvest Valley (not the lake area), or Foothills and Pick Fight until it procs.

Also make sure you've done her regular encounter at least once since 4.34, you need to beat her again for the scene to be ready to proc.

I have a question on this: do you need to beat her original encounter every time you want to see the new scene, or just once to unlock?

This is consistent with my experience. It's fight-encounter-fight-encounter-etc.

Not for me at least. One normal fight, one encounter where one can either talk or do a quickie.

The next time it's a normal fight, and then an encounter, rinse and repeat.

It would be neat to see her be in a set location for snu snu after you breed her and its clear she won't beat you in a fight. 1) Companion submissions are closed.
2) Even if they weren't, SKoW already has her companion slot filled by Best Bug.
3) There really isn't much to work with for Sariel anyways, even uncursed she's a horni bun who loves it in the butt and... that's about it.
