What upgrades should you assign / buy for your ship after hijacking The Sidewinder to beat Teyaal's Ship?
I want to ideally have 10, maybe 11 crew members, so what would I need to buy?

Six Advanced Quarters will be enough for your crew needs. Combat-wise, two missile turrets (plus two crew members who can operate said turrets) should do the trick; fill the remaining two slots with whatever you want. Most recommendations I've seen add a Hardened Systems to help resist Teyaal's shield draining ability. I personally like to have a Power Core Tuner so I use less Energy per turn (net loss of 20 instead of 35); I also have a seventh Advanced Quarters, even though I probably won't need it even after accounting for unimplemented crew members.

Ok, so I realistically just need a Hardened Systems + 2 turrets for The Sidewinder?
Usually I get the Ovalek and hyper drive away from stuff..

1 Hardened Systems makes it likely you'll resist the Shield Disruptor & Vampire, 2 guarantees it. I like to be cheeky and install my own Shield Vampire to use against her, but that's not strictly necessary.

You only have to fight her 3 times, so you could just do that, then uninstall the Hardened Systems. Also note that if you get your Accuracy high enough, you basically ignore the Star Viper's Cloaking Field. Hardened Systems also boost Sensors and Missile Turret Accuracy bonuses stack.
You can also avoid the fight entirely by swapping to a different ship before going back to Zheng Shi.

Two Missile turrets, 1 Shield Booster and 2 Hardened System, Advanced Quarters in all remaining slots.
After three victories over her, you can replace 1 Shield Booster and 2 Hardened System with Sensor Suite and 2 Advanced Quarters.

My only problem with this is that when I fight Teyaal on the Sidewinder with those upgrades... won't that mean I'll have to send some of my 9 crew members home?

Start by installing Advanced Quarters, 5 of these upgrades will give you a maximum crew of +5, then return a maximum of 10 crew by installing the other 5 upgrades.

Actually, each Advanced Quarters is effectively room for 2 crew, so 5 Advanced Quarters gives a crew capacity of 10 (excluding empty slots, which are +1 capacity each, and any ship-specific bonuses e.g. the Clydesdale's +2).
