I gave my guy plant hair and skin, but the colors weren't what I wanted (Red and blue instead of green and brown, respectively). Is there any way I can change their colors?

Yes, the same way you can change the color of hair, fur, eyes and skin (the stylists make things easier for some of those, but not skin) which means TFing away from anything that's part of the same 'type', then TF back and save-scum until you get the color you want.
You can easily change your hair colour using the coloured Scrubs that the Stylists (Aurera) sells in her shop (located in Hawkethorne it's the shop closest to the Old Forest's Entrance).
If you do want to TF into Bronze skin you can do it with a Root of Man (Ivris sells them) combined with a Mandrake Root (Body).
But I think this will first turn your plant skin back to normal skin.
I don't know an easy way for just changing skin colour to brown (without other side effects) other than using the console. (Although I thought the "brown" skin colour was "bronze".)

pc.skinColor = "[Desired colour here]";the colour should be in lowercase. - For example if I wanted to change skin colour to green I would type:
pc.skinColor = "green";or for brown/bronze:pc.skinColor = "brown";
