so after meeting amhri and talking to her, and meeting and talking to atani regarding harbouring her. how do i marry amhri??

Ahmri can be found on the Northern most square in the centaur village (assuming you completed the quest by not killing her father) - so after the quest you just enter the centaur village again and go to that square. It's the exact same square as the one where you encounter her father when he is corrupted.
After you save her father, in order to be able to marry her you need to select the option to go look for her - either invite her to dance or go swimming in her private lake area thing. If you don't go look for her I'm pretty sure it locks you out of the romance option - when I tested it the dialogue upon meeting her again in the centaur village was just an awkward interaction with her.
As for actually marrying her, you'll need to speak to her after saving her father upon entering the centaur village again (assuming you went looking for her in the quest wrap up as mentioned above). She'll refer you to her father who'll suggest finding some flowers to propose. The flowers are located on the Eastern most tile in the centaur village - the square next to the BDSM pony.

i have tried to defeat talhdas without fighting him, but no matter how many times i try i seem to be unable to save him. how do i go about it?

Okay, so the way in which you do it is a conversation battle. Typically what you'd do is when you start the quest - i.e. leaving the Marefolk Village with Ahmri - it'll say Ahrmi is tired and wants to take a break. In that scene I always opt to take a break - and then exhaust all of the talk options with her. Unsure if that has any difference with the conversation battle with her father.
The way I always save her father is [Berate] when he talks about the power Kasyrra has given him, then talk about his [Family] next. After that I select the option for [Single Dad] - this option basically ends the conversation battle and he is freed from corruption. I'm pretty sure that there are other options to win - but this was just the one that I found and use all the time.

You said that you've talked to Atani about harboring her and then jumped straight to asking about marriage, that's not completing the quest. You have to free the village to do that. You also have to do things there properly, meaning winning the conversation battle at the end.
Once the village is freed Atani can be found in the village on a deceptively prominent tile marked with a star up at the top and her encounter procs as soon as you step on the title. You literally can't miss it if you're putting in any effort to look.
If everyone could just focus on defending themselves instead of any imagined offense on the behalf of a theoretical someone else, this world would really be a better fucking place.
