In-universe it'd make sense if Minotaur bulls were stronger on average, not just because of their biology, but also as a result of living in a far more organized society that can afford to have a regular standing army and to ptovide ample leisure time for the rest of the citizens to get swole.
One thing most people don't consider when considering what races/species/etc. may be strongest, is diet.
Consider: Macedonian soldiers had a varied and hardy diet primarily of grains, which would allow them to perform at a more sustained rate. This would improve their endurance rates, lasting longer, theoretically.
To contrast, the Huns ate a mostly meat based diet. This kind of diet benefits a more burst base strategy, as their effectiveness would decline the longer a fight went, faster.
The diets contrast well a marathoner vs a sprinter. I feel, as presented so far, that the minotaurs would have a more rounded diet than most lupines...
