There have been talks of potentially writing a scene for reverting Anno back to her normal fitness, yes. But, as far as I know, there isn't such a scene yet implemented in game. You'll have to wait for it.

From the small test-run I did it’s mostly chub and extra large boobs and ass. Just make a save before you try it and run through the scenes to see if there’s anything that’s a dealbreaker for you. Then, reload and enjoy it if you want or ignore it.

No. When you ask Anno to revert, she tells you she'll do it but she's not gonna do it all again.
