I know that being a goo is hard to reverse, what would happen if i took one of the costume items like the goblin suit or the horse suit?

If those costumes don't force change the hair, your character should be fine. If the change is undesired, it can be reverted in the goo menu for some biomass.

What happens if it does change your hair? I think the Bimbo one makes you have platinum blonde hair

Well, it's okay if it changes the hair color, that's fine. It's the hair type that needs a check due to it locking out goo-related abilities.
