if you do the last probe mission does the game just end? or will i be able to keep playing?

No, you can play as long as you want. You can't even find the next probe yet since it's not implemented.

but the final probe location is unlocked already though..... so the probe part of the story there is not yet implemented?

...no? We still have yet to find the dhaal probe, and the dev team has said there will be one more mainline story planet.
