Are there potions that change sex? Have not encountered anything that does.

Yes. Among the first tier potions that you can learn from Rosalin, Nagazm will turn you into a herm. There are also a second-tier feminizing and masculinizing potions that you can learn from Jeanne, the court magician in Rigard.

I see there are are "Enlarging" and "Gaping" potions... but, are there any for "Shrinkage" with or without changing forms?

Cat and Fox transformatives will shrink your hips/tits/ass if they are big. Testos will shrink you vag and Estros - your dick and balls.
